Last week was my birthday, happy birthday to me! And like any birthday princess I look forward to any opportunity to celebrate. But, as the weather and work events took over my schedule, the time available for partying was greatly reduced. So with an empty Sunday morning at my disposal I decided to host a special brunch. My family and a few friends gathered together and gave me the best present of all, they let me feed them!
Simple brunch items like muffins, bacon (cooked in batches in the oven) and scrambled eggs accompanied a fresh fruit salad, homemade monkey bread and breakfast taco fixings. The menu was fun and easy and a real crowd pleaser. But the hit of the day was my mom's breakfast casserole. Everyone asked for the recipe, including me, so she has graciously shared it with us for the column! Even if it's not your birthday, brunch is a great way to celebrate with friends (and enjoy a glass of champagne before noon). Cheers!
Ingredients
1 lb Hot breakfast sausage
6 Slices white bread, cubed
2 C Grated cheddar
6 eggs
2 C Milk
3/4 tsp Dry mustard
1 tsp Salt
Cayenne pepper, to taste
Directions
- Brown sausage, drain.
- Place sausage in bottom of 9x13 pan
- Cover with cubed bread, then with cheese
- Mix milk, eggs, mustard, and salt with mixer, pour over other ingredients
- Place in refrigerator over night
- Take out an hour before baking
- Place in preheated 350 degree oven for 45 minutes until golden brown
