Mom or short-order cook?

Sundays are not the best days to experiment in my kitchen. I know for most families it works out fine - in fact many of my friends are doing all their meal prep on Sundays for the week. But with my teenager's triple threat afternoons consisting of choir, church and catechism, we have little time to cook an elaborate meal, let alone plan for the week. So when all else fails I turn to my smallest sous chefs to pick our dish. If your house is anything like mine you know that this means you'll be eating comfort food that is simple and delicious.

This Sunday while driving to and from here and there, picking up clothes at dad's, running errands, grocery shopping and the like, Lola noticed how frantic I was. In her adorable 7-year-old wisdom she suggested eggs and grits for dinner. "Mom it's good and easy." Did I raise this child right, or what?! Well after a 30-minute wait in line for groceries - yes, only 2 lines were opened in the whole store - and an exceptionally long train delay I couldn't be happier with her decision.

But, in an effort to do something special for my little crew I decided to play short order cook. This is usually pretty frowned upon in our house. I'm one of those parents who cooks one meal and you "eat it or wear it" (don't ask, I got that phrase from my mom and I still don't know what it means haha). So with my spatula in hand I took their "orders" and cooked their eggs to their own personal tastes. Some plates got fruit, some went without, bacon vs. no bacon, who wants butter on their biscuits? In doing so I was able to make my kids feel like they were the customer for once and I was happy to serve. In all honesty though, I was happy to serve. Playing around in the kitchen with them, calling "order up" when their plate was complete, it was all just part of the fun.

So next time your kids have you wondering, am I your mom or a short-order cook? Just go with it. Make them feel special and enjoy the ease of breakfast any time of the day.

  • Try sunny side up eggs & bacon strips for fun smiley faces
  • Mix fresh and canned fruit for an easy fruit salad
  • Instant grits taste special with a spoonful of cream cheese mixed in
  • Make extra biscuits to reheat on busy mornings

What are your favorite go-to dishes?
