One holiday down, two more to go before the end of the year. Even though Christmas and New Year's Eve tend to get more hype and attention, Thanksgiving is the hardest one for our family to recover from. All those decadent casseroles, desserts and sleep-inducing turkey coupled with bargain-shopper-filled traffic jams make this holiday stressful for the Average Joe or Josephine.
Every year we eat turkey for weeks, but all I actually want is something simple, bright and acidic to give me a jump start on the inevitable craziness about to take place. I opted for chicken to ease out of the vicious turkey cycle, but pork could work as well. The bite of the balsamic vinegar and tomatoes pair well with leftover mashed or roasted potatoes. Add a bright green side of field peas or green beans and you're on your way to a cleansing meal!
Ingredients
4 chicken breasts, thighs or pork chops
1 TBS + 2 TBS olive oil
salt & black pepper
1/4 c balsamic vinegar
yellow onion, sliced into rings
1 can diced tomatoes
Directions
- Season meat with salt and pepper while you heat a large skillet or grill pan with 1 TBS of oil
- Brown pieces, about 5-6 minutes per side depending on thickness
- Add onions once you have flipped to the second side, cook until softened, 5 or so minutes
- Add vinegar, remaining oil and tomatoes and toss to coat
- Allow to simmer and thicken for an additional 5 minutes or until juices run clear
