Everyone remembers that scene from Cool Hand Luke where Paul Newman is challenged to eat 50 boiled eggs...I can't think about it without cringing. Boiled eggs have never been a particular favorite of mine - even though I love eggs just about any other way. In fact, the only time I really eat them is during holidays or social occasions. At our office, any time we get together we always ask Ms. V (our affectionate name for my coworker, Virginia Jones) to whip up a batch of her famous deviled eggs. They're always gone in no time, and try as you may, you can't eat just one!
So when my diet called for eating a half dozen eggs in one sitting- I know, right? I couldn't think of any other way than to create a more angelic version of my beloved deviled eggs. Now, they pale in comparison to Ms. V's - but I dare not ask her for her recipe cause I'd be making them every night! But my version is a great treat for a holiday function or a even a dinner alternative. Removing 2 of the yolks, adding the whites, and using olive oil mayo helps keep the protein up and the fat down.
Ingredients
6 eggs, boiled
1-2 TBS olive oil mayo
1 tsp mustard
1 tsp white vinegar
1 tsp sugar or 1 packet of sugar substitute
1 tsp salt
1 tsp black pepper
1 tsp cayenne pepper
paprika for garnish
Directions
- Boil eggs and cut lengthwise in half
- Add the yolks of 4-6 of the eggs, and 2 egg whites to a food processor (discard 2 yolks for reduced fat version, but feel free to add them to the mix if you'd like)
- Add mayo, mustard, vinegar and seasonings to the mix and pulse until smooth. I love the olive oil mayo with cracked pepper, so I use that and skip the additional black pepper (this mayo is potato or egg salad is amazing!)
- Pipe into remaining 8 white halves and garnish with a sprinkling of paprika
I may not be as cool as Paul Newman, but this recipe surely is. And I bet you'll like it too!
