A lot of people I know are impacted by dietary restrictions. Whether they're diabetic, lactose intolerant, or affected by high blood pressure, all these people seem to have one thing in common - they crave exactly what they can't have. What a horrible destiny - be it food, or other things - to have to avoid the thing you want most! To a much lesser degree I've been feeling that on my diet. I never saw myself as much of a bread person, but lately I just want to grab a loaf, some buns, or better yet, a pizza, and indulge.
Scouring my local health food store yielded a surprising amount of options. There was coconut flour, arrowroot flour, and a billion oddly-named, strange smelling substitutions. But the soy flour with its familiar name and super low carb count really stood out. Here's my recipe for an easy gluten free crust that is great tasting and delicious when your inner glutton is trying to escape.
Top the crust with your favorite fixings - I used a ton of vegetables, lean meats, and veggie cheese to keep the guilt low and the flavor high.
Ingredients
1 1/2 c soy flour1 egg, beaten
1/2 c skim milk
1/8 c water
1 tsp salt
1 tsp nutritional yeast
sprinkle of garlic powder & Italian seasoning
1 tsp olive oil
Directions
- Mix dry ingredients, add egg, milk, and enough water to create a sticky dough
- Coat with cooking spray and place a large piece of plastic wrap on top
- Roll dough onto a round pizza pan until 1/8" thick
- Bake at 400º for 10-12 min
- Remove from oven, run a knife under the crust to make removal easier later
- Top with your favorite toppings and bake until cheese is melted
