Spice up your summer

One of my favorite parts about dining out is taking those flavors back to my kitchen. And one of my favorite things to do is to order a bunch of appetizers or small plates and share them among the table. 

My friends and I love to try new things, but if there is some version of this dish on the menu, I guarantee it'll end up right in front of me! Lightly-fried shrimp, sweet and spicy mayo, and cold, crisp lettuce? What's not to love?!
It doesn't take many ingredients to replicate this popular app and it will surely spice up your supper!

spicy-glazed shrimp

Ingredients 

1 lb shrimp (70-90 count)
Egg wash (1 egg whisked with water)
Equal parts cornstarch & flour
peanut oil for frying  
1 c mayonnaise
1/2-3/4 c sweet chili sauce (adjust based on taste 
2 cloves garlic, pressed 
2 TBS lime juice 
1/2 tsp red pepper flakes 
Sriracha sauce to taste 
1 head romaine lettuce, thinly shredded

Directions

  • Peel and devein shrimp, toss is egg wash, then mixture of flour and cornstarch, set aside
  • Fry in hot oil until golden brown, allow to drain and cool
  • Meanwhile stir remaining ingredients (besides lettuce) together in a large bowl
  • Spoon sauce a little at a time onto shrimp, until fully coated
  • Serve over a bed of the chopped lettuce
